The rising global demand for protein, combined with the environmental strain caused by traditional animal and plant-based protein production, signals an urgent need for more sustainable and resource-efficient alternatives. Single-cell protein (SCP) microbial biomass sourced from bacteria, yeasts, fungi, or algae has emerged as a promising candidate due to its rapid growth (doubling time of 1-3 hours for bacteria, 4-6 hours for yeast), significant protein output (ranging from 40–80% dry weight), and ability to utilize a variety of substrates. Fruit processing wastes, which are typically underutilized, present a particularly valuable substrate; these wastes are rich in carbohydrates (10-30% w/w), minerals (1-5% w/w), vitamins (notably vitamin C at 50-200 mg/100 g), and bioactive compounds suitable for microbial conversion.
